It is typically a breakfast dish but can be served with any meal, with ingredients modified to make it a sweet treat or a savory delight. It is frequently served during feasts and festivals or other significant events. It's easy to make in large quantities and is successful at satiating even the most fearsome raiders.

Arenwegian Breakfast Bread from Arerlundur in Valtiel

Ingredients

  • 3 potatoes

  • 1/3 cup extra virgin olive oil + 2 additional tablespoons

  • 1 tablespoon sea salt

  • 1 tablespoon ground black pepper

  • 1 tablespoon ground red pepper

  • 1/2 cup pancake mix

  • 1 tablespoon vanilla

  • 1/4 cup powdered sugar

  • 2 tbs maple syrup

  • 1 tbs honey

Recipe

  1. Dice 3 potatoes into small squares.

  2. Pour 1/3 cup extra virgin olive oil into a skillet and bring to simmer, then place the potato squares into the oil. Cook for 20 minutes, stirring and flipping occasionally.

  3. Remove cooked potatoes from skillet and place onto a plate with cloth to soak extra olive oil. Sprinkle 1 tbsp of black pepper, sea salt, and red pepper onto the potatoes. 

  4. Combine pancake mix, 2 tbsp olive oil, and 1 tbsp vanilla into a mixing bowl, mix well. 

  5. Pour potatoes into the pancake mix and stir well. Then place battered potatoes onto the skillet and cook for 5 minutes or until mix is crispy and brown. 

  6. Sprinkle on 1/4 cup powdered sugar, maple syrup, and honey, then feast!
